Mixed Berries Yogurt Dessert

A delicious breakfast will feature berries and some yogurt and it's going to be very healthy. Let's make a mixed berries yogurt keto dessert in just a few minutes!

Ingredients

Mixed Berries Layer

  • 1 cup mixed berries + a few more to garnish
  • 1 tbsp maple syrup

Yogurt Layer

  • 1 ½ cup of coconut yogurt
  • 1 tsp vanilla extract

Base

  • 1 cup walnuts
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup

Instructions

For the base

  1. Place walnuts in a blender and pulse the nuts so they break apart and look like breadcrumbs. Add coconut oil and maple syrup and pulse again. Set aside.

For the berries layer

  1. Place them in a blender with maple syrup and pulse to a jam consistency. Set aside.

For the yogurt layer

  1. Mix the vanilla extract with coconut oil (avoid this step if using vanilla-scented yogurt.

Prepare the dessert cups

  1. Add 2 tbsp of the nuts base each, pressing with a spoon to cover all the surface. Add one layer of yogurt (about 2 tbsps) and then one of the mixed berries (about 1 ½ tbsp) and repeat.
  2. Finally, top them with a tsp of berries jam and more fresh berries. Enjoy!

Notes

  •  Keep them in the fridge for up to 4 days.
  • Serve it as a breakfast with granola or different fresh fruits.
  • Add chocolate chips on the top for a sweeter dessert.
