Easy Garlic Butter Mushrooms

These skillet sauteed mushrooms are tender and delicious with the most amazing garlic butter flavor.  They make the perfect low-carb appetizer or side dish for your favorite meal.  They pair perfectly with steak, pork chops, or oven-roasted chicken.

The mushrooms are sauteed with a generous amount of butter, minced garlic, onion, salt, pepper, and some fresh herbs.  Best of all, the whole dish comes together in about 15 minutes.

Ingredients to Make Garlic Mushrooms

The star of this recipe is mushrooms, of course! I like to use cremini mushrooms, which are actually just the baby version of portobello mushrooms! 

If you can’t find cremini mushrooms, don’t worry. Look for mushrooms labeled “baby Bella’s”, or go with the classic button mushrooms – they’ll be equally delicious in this recipe.

For this recipe, you’ll also need:

  • Butter.  I cook with unsalted so I can control the salt myself.
  • Garlic.  A couple of fresh cloves.
  • Onion.  I like to add onion, but you can easily omit it to reduce carbs.
  • Thyme.  Fresh or dried.
  • Parsley.  Fresh parsley is best, here.
  • Salt, and pepper.  Fresh cracked if you have it.

If you don’t have fresh herbs on hand, you can definitely some dried herbs instead.  Just use half as much if you’re using dried.

Or, a really easy shortcut would be to use a teaspoon of dried Italian seasoning instead of the thyme and parsley.  It would be a little different — but still a very delicious! — flavor.

Carbs in Mushrooms

Mushrooms are a healthy low carbohydrate food choice. Mushrooms are also a good source of fiber (particularly soluble fiber) copper, and B vitamins.

1 cup of raw mushrooms has about 15 calories and 1.5 net carbs.

How to Make Garlic Mushrooms

This easy recipe for garlic butter mushrooms comes together in one skillet or cast iron pan in about 15-20 minutes

The first thing you’ll want to do is get a heavy skillet or cast iron pan preheated over medium-high heat. Melt the butter, add in the diced onion, and stir for a few minutes.  After the onions start to carmelize, add the mushrooms.

Saute the mushrooms over medium heat for 10-12 minutes until tender.  The mushrooms will release liquid, then the liquid will evaporate, and then they will start to brown.  Then, add the garlic and herbs and stir one or two minutes more — until your whole kitchen smells heavenly. (I add the minced garlic at the end, so it doesn’t burn or get bitter while the mushrooms are browning.  2 minutes is enough time to cook fresh garlic if it’s minced finely.)  

Season with salt and pepper, and sprinkle with more parsley to garnish.  That’s easy, right?

How to Wash Mushrooms

Before we move on, let’s talk about how to wash and prep those mushrooms before you toss them in the pan.

You may have heard rumors about never letting mushrooms touch water — but I’m here to tell you that it’s perfectly alright to rinse whole mushrooms.  

What I like to do is knock off any loose dirt first, then lightly rinse whole mushrooms under cold water. Thoroughly pat dry them dry with a paper towel before cooking.

The one thing you’ll want to avoid is soaking mushrooms in water for a long time, as they will absorb too much water and won’t brown as well during cooking.

What to Serve with Garlic Butter Mushrooms

These garlic mushrooms are a perfect side dish to serve with steak. You can recreate the steakhouse experience at home for a fraction of the price. 

And, they would make a great accompaniment to roasted chicken or pork chops.

  • 4 tbsp butter
  • 1/2 cup onion, diced (optional)
  • 1 pound whole Cremini or button mushrooms
  • 2 tsp garlic, minced
  • 1 tsp fresh thyme
  • 1 tbsp parsley, chopped
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)

Instructions

  1. Heat the butter in a large pan or skillet over medium-high heat.
  2. Sauté the onion until softened, about 3 minutes.
  3. Add the mushrooms and cook for about 10 minutes until golden brown.
  4. Add garlic and herbs, and cook for an additional 1-2 minutes.
  5. Season generously with salt and pepper (to your taste).

Notes

  • If your mushrooms are very large, cut them in half or quarter. Otherwise, you can leave them whole.
  • If you would like to use dried herbs, use half as much as fresh.
  • If you would like to reduce carbs even further, omit the onions.
