Keto Jerk Chicken Recipe
Step 1:
In a blender or food processor, blend together green onion, garlic, jalapeno, lime juice, olive oil, brown sugar, allspice, thyme, cinnamon, salt & pepper, and 2 tablespoons of water until smooth. Set aside 1/4 cup of the marinade for later.
Step 2:
Pour the remaining mixture into a ziplock plastic bag or bowl with a lid.
Step 3:
Toss in the chicken in the marinade until fully coated.
Step 4:
Allow to marinate in the refrigerator overnight or for at least 2 hours.
Step 5:
Bake in a 400-degree oven or cook on the grill until done.
Step 6:
Brush with reserved marinade and serve.
TIPS FOR MAKING KETO JERK CHICKEN
- Dry the chicken before marinating – If you dry the chicken before tossing it in the marinade, it will allow the chicken to absorb the marinade much better. Your chicken will turn out more flavorful and juicer.
